Knot Stock:
A most particular pale
Availability: Year-Round. ABV: 5.5%
Black, cracked, stuffed in a sack, boiled and cold-infused. The real treat of our A.P.A. is the tangle of flavors that fresh cracked pepper and Northern Brewer Hops create. At 65 IBUs (bitterness units) there's plenty of zing for the Hop Heads or Bitter Bettys, but not so much to overpower the tingle of the black pepper as it slowly kicks in. Likewise, the 15° Plato malt bill features a healthy dose of caramel malt meant to soften (but not stifle) the play of pepper and hops on the palate.

This is a most intriguing offer. When I first read the label and saw black pepper as an ingredient, I shuddered...honestly. Being a bit of beer purist, this did not agree with me on my first reading impression, and simultaneously brought back hideous memories of the Cave Creek Chili beer craze of about 15 years ago - a brew that burned rather than quenched. As a result, I could not stomach the courage to explore this Furthermore style until recently when it happened to be a central offer at a local party. WHAT a surprise! The description provided above is bat on. Your initial taste is a wonderful pale ale with something odd going on in the background. It is not till quite a bit later that the hop bitter is slowly edged out by the bite of mild heat from the pepper. The pepper never overpowers, however. And I would wager that most who try this without reading the label would not guess that black pepper is an ingredient. I am not sure that I could sample one after the other in a straight string. But as a twist to an otherwise standard evening of fun with friends, this is a unique and pleasant shot across the bow. Most Impressive! - These Furthermore folks have a beautifully quirky view of the brewscape.

I tried Knot Stock for the first time last month, on a trip home to MKE for the holidays. It is because of this event, that I hardly remember my best friend's wedding, which occurred later that evening, apparently.

Aron & Chris, I stumbled across two of your beers (Knotstock & Fallen Apple) in a grocery store while on a beer tour driving from MIchigan to California, where I finally drank them. Wow, what a pleasant surprise. I love creative, fun and interesting beers. Next time I drive through Wisconsin I want to visit the brewery/tasting room, whatever. I also want to invite you guys to come on one of my five annual beer tours of Belgium. I offer pro brewer discounts. View my tours on my website when you get a moment. Keep up the good work! While I have yet to have a 'bad' beer from Furthermore, or even a Furthermore beer that didn't compel to have a second, I cannot exclaim enough the virtues of MAKE-WEIGHT. This beer is so full of flavors...I'm actually planning to sit down with a a MAKE-WEIGHT, and a pen and paper, and over the course of 40 minutes of tasting this one beer, catalog all of the flavors that come out to play. The malts (did you use more than one kind?) are perfectly paired with the hops. And right there at the edge sits the alcohol, casual, but lively, and oh so willing to be your best friend (you're buying, right?). There's so much more to say about this beer, and I'll keep talking as long as you keep brewing.

First tried the Knotstock a year ago and liked it, just tried it again and loved it...I'm a big fan of Surly over here in the TCs and need a beer I can wrap my mouth around and now I think the Knotstock compares very well with Surly's Furious, so great going! Now, if you could put a good, genuine, classic dry bock out there for us, one like grampa used to drink...

Had my first Knot Stock last night. Like Rex, I'm from the Twin Cities but originally hail from Elkhorn, WI. Surly's Cynic has a hint of black pepper to it, which I really dig. Consequently, I was super stoked to try Knot Stock. I had / have a cold and my sniffer is semi-busted, which bummed me out as I thought I wouldn't get the full flavor. Took my first sip... waited... took another sip... there it is. Holy cow. Strong, distinct pepper flavor - perfectly complimentary to the ale. Really effing good. It's so good to see WI brewers creating such awesome stuff. Kudos, gents.

I have been told I tend to say the word "furthermore" if I have couple beers... I saw this beer on a menu and HAD to try it. I LOVE pepper too. I am the person who unscrews the top off so I have enough on my eggs! Love this beer it and can't wait to ship some to my folks in Oregon!

Had my first Knot Stock during the Super Bowl. Loved it! Can't wait to try it with a burger the next time. Will most definitely be getting me more and more of this in the near future.
